SOUTHWEST SUMMER SALAD WITH MANGO VINAIGRETTE




I travel a fair bit for work, and when I travel, I try to keep to my usual eating habits. Especially in places that I know will have excellent fresh vegan/vegetarian food. A few months ago I was in a small town in southern CA and I looked around for lunch spots. I found a cafe near my site which served only vegan food - I *had* to go! And I was hooked!! I ate there every single day of my trip, and I ate their version of this salad. It's *that* good! And so filling.

And the mango vinaigrette - let's just say I now have this dressing in the fridge *all* the time in case I suddenly crave it! You can really put any vegetables you wish on this salad... if you don't have jicama, use radishes. Toss on some roasted vegetables: cauliflower, carrots, parsnips, potatoes, sweet potatoes, a whole jalapeño, etc. Add a bit of roasted chicken or a filet of salmon to make it heartier.

Garnish with parsley instead of cilantro, or coarsely chopped almonds instead of pumpkin seeds. So many ways to make this your own...

Southwest Summer Salad with Mango Vinaigrette
makes: 2 servings

- 1/2 cup diced tomato
- 1/2 cup diced cucumber
- 1 small jicama, peeled and cut into batons
- 1 avocado, halved
- 1/2 cup sliced red onion
- 2 tbsp. lime or lemon juice
- 2 tsp. sea salt
- 3 cups mixed salad greens
- 2 cups cooked quinoa (or rice, millet, or lentils), cooled
- 1/4 cup cilantro leaves, roughly chopped
- 2 tbsp. roasted pumpkin seeds
- 2 tbsp. currants or raisins
- 1 tsp. cayenne pepper
- 1 jalapeño, sliced
- 1 cup Mango Vinaigrette (recipe below)
  1. In a bowl, combine tomato, cucumber, and red onion. Toss with lemon juice, salt, and cayenne pepper.
  2. Divide salad greens into two salad bowls or plates.
  3. Top each with 1 cup of cooked quinoa/millet/rice. Arrange the tomato mixture, jicama, and an avocado half on the greens. Drizzle with 2-3 tbsp. of the vinaigrette. Garnish with the sliced jalapeño, cilantro, pumpkin seeds, currants/raisins, and cayenne pepper.
  4. Serve additional dressing on the side.
Mango Vinaigrette
makes: approximately 1 cup

- 1 cup chopped fresh (or frozen) mango
- 1/2 cups safflower oil
- 1/8 cup maple syrup
- 1/4 cup lime juice
- 1 tbsp. rice vinegar (use lime juice if you don't have rice vinegar)
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1/2 in. piece of fresh ginger, peeled
  1. Place all ingredients in a blender and blend until smooth. Adjust salt and pepper to taste.
  2. Store leftovers in the fridge.

STIR-FRIED SWEET PEPPERS WITH COCONUT AND PEANUTS





Summer comfort food at it's best! I love these stir-fried peppers - or shaak as we call it in Gujarati - with rotli, these gluten-free flatbreads, or rice. It's flavourful, healthy, fresh, and light. Try it!

Stir-Fried Sweet Peppers with Coconut and Peanuts
makes: 4 servings


- 1 lb. (~1/2 kg) sweet mini peppers, stemmed, washed and sliced into rounds
- 1/4 cup raw peanuts
- 2 dried whole cayenne chiles
- 1/4 cup desiccated coconut (unsweetened)
2 tsp. salt
- 1 tsp. sugar
- 2 tbsp. coconut, safflower, sunflower, or other neutral oil (not olive oil!)
- 1 tsp. cumin seeds
- 1 tbsp. caraway seeds (shah jeeru, or cumin seeds)
- 1 tsp. mustard seeds
- 1/2 tsp. turmeric powder
- 1/8 cup water
- 2 tbsp. lemon juice
  1. Dry roast the peanuts, caraway seeds, and dried chiles on medium-low heat till they are fragrant and the peanuts and chiles are lightly browned in some spots. Turn the heat off and cool. Transfer the roasted peanuts, cumin, and chiles to a blender or spice grinder. Add the coconut, sugar, and salt and grind into a coarse powder.
  2. Heat the oil in a pan on medium heat and add the cumin and mustard seeds. Once they sizzle and the mustard seeds start to pop, add the turmeric and sliced peppers and mix well. Add the water, cover, and cook for 4-5 minutes.
  3. Uncover, add the coarsely powdered spices, and mix well. Cook for an additional 2-3 minutes uncovered, stirring once.
  4. Turn off the heat, add the lemon juice, stir.
  5. Transfer to a bowl and garnish with the chopped cilantro. Serve with roti or rice.

HARISSA-ROASTED VEGETABLES WITH CHICKPEAS


Roasted vegetables are delicious, quick, cook on their own, and are my favourite! And *these* roasted vegetables are my all-time favourite. With the chickpeas, olives, and raisins added to the vegetables laced with smoky spicy harissa, this is just an incredible meld of flavours in a bite. And, just like a meal should be, it's filling yet light, and doesn't leave you feeling sluggish.

Use any kind of green olives, and any vegetables that roast well - carrots, parsnips, rutabagas, any kind of summer or winter squash, and any others that come to mind. I love these with salad greens and maybe a little avocado added into it all if I'm really hungry, but to make it an even more hearty meal, serve this with rice or bread and a salad on the side.

Harissa-Roasted Vegetables with Chickpeas
makes: 4 - 6 servings

- 2 tbsp harissa (home-made or bought)
- 1 lemon, juiced
- 2 tbsp. olive or avocado oil
- 1 tsp. salt
- 3 cups green cauliflower florets (broccoflower, but any coloured cauliflower is fine)
- 2 purple potatoes, cut into large chunks (I used purples, but any potato variety is fine)
- 1 yellow squash or zucchini, halved and cut into thick slices (or any winter squash, cubed)
- 2 cups cooked chickpeas (or one 15 oz. can, drained and rinsed)
- 1/2 cup sliced red onion
- 1 cup sliced capsicum (of any colour)
- 1/2 cup green olives, pitted
- 1/4 cup raisins (preferably soaked in warm water for 10-15 minutes to soften)  
- 2 tbsp. water
  1. Preheat the oven to 400 F (200 C). Lightly grease a large gratin/lasagna pan.
  2. In a large stove-proof pan mix the lemon juice, harissa, oil, and salt. Add the vegetables and chickpeas, and toss or mix well to coat the vegetables. Transfer everything to the greased pan and bake for 30 - 40 minutes, mixing the vegetables once during baking. Turn the heat down to 375 F (190 C) for the last 10 minutes if needed.
  3. In the same stove-proof pan you used to toss the vegetables, sauté the onions and capsicum, adding the 2 tbsp. water if needed (the little bit of the harissa mixture remaining in the pan is plenty for sautéing. No need for additional oil.). Mix in the olives and raisins in the last few minutes before turning off the heat.
  4. Remove the vegetables from the oven and mix in the sautéed vegetables.
  5. Serve immediately or at room temperature, over salad greens, or with bread or rice.

SNACK ATTACK: CUCUMBER TOMATO SANDWICHES WITH MIMOLETTE AND PERSILLADE

Easy to make but immensely flavourful sandwiches that are easy to customize with ingredients you have at hand. Such as leftover parsley which I often use to make into a persillade - parsley pesto - a condiment that's great on sandwiches, potatoes, eggs, fish, even on crackers with a smear of goat cheese or fromage blanc.

No parsley, no problem. Use cilantro instead. Replace the serrano pepper with freshly ground black pepper. Add a couple of thin slices of onion under the tomatoes. Get creative!

As with all bread-based recipes, you can use gluten-free bread. But please don't use something weird and processed like the travesty that's vegan "cheese". If you don't want dairy, just skip the cheese and add a few thin slices of a boiled potato to add a creamy note between the persillade and vegetables.







Cucumber Tomato Sandwiches with Mimolette Cheese and Persillade
Makes: 2 sandwiches


Persillade (makes ~1/4 cup):
- 3/4 cups fresh parsley, hard stems snapped off
- 1 serrano pepper, cut into large chunks
- 1 clove garlic, peeled
- 1 tsp. salt
- 1 tsp. lemon juice

1. Blend everything together into a smooth paste. Set aside.
2. Preheat oven to 400 F/200 C.

Sandwiches:
- 1/4 cup persillade (recipe above)
- 4 slices bread of your choice
- 4 - 6 oz. demi-vieille mimolette cheese, thinly sliced (or any other hard cheese of choice)
- 1 tomato, thinly sliced
- 1 cucumber, thinly sliced
- coarsely ground pepper, to taste

1. Spread the persillade evenly on each slice of bread. 
2. Divide cheese slices evenly for 4 slices of bread and arrange on top of the persillade on each slice of bread.
3. Place all 4 slices on a baking tray or pizza stone (no need to heat the pizza stone for this recipe) and put in the oven for 5 minutes or till the cheese is melted and starts bubbling.
4. Remove bread from the oven and arrange tomato slices on 2 of the cheesy slices.
5. Put all the bread slices back in the oven for 5 more minutes.
6. Turn the oven off and take the bread out.
7. Arrange cucumber slices on top of the tomatoes and grind pepper onto the slices with the cucumber and tomato slices.
8. With the cheese side down (facing the cucumbers), top with the other cheesy slice of bread and press firmly to make a sandwich.
9. Repeat with the remaining cucumbers and bread.
10. Cut each sandwich in half and serve. Enjoy!
